
The Patagonian Scallop Rolls
After years of testing which scallops are best suited for processing into rolls, we found that Argentine scallops deliver the best result. Just like the Canadian ones, these scallops are frozen at sea within one hour after catch.
With the current shortages of Canadian and Japanese scallops, they offer an excellent alternative.
With the Argentines, we transform small scallops into uniform rolls – allowing the end user to slice perfect medallions. This way, we turn a product that would otherwise be underutilized into some Premium and sustainable a perfect addition to our Premium Quality Scallops™ range.
This compact format not only makes the product easy to handle, but also opens up countless possibilities for creative and precise preparations, allowing chefs to tailor the thickness of the medallions to each dish.
The rolls are supplied frozen. For best results, store them in the freezer and let them thaw in the refrigerator until half-frozen before slicing. This ensures clean, even cuts and perfectly shaped medallions at your desired thickness.
The scallops themselves are known for their juicy, tender texture and a subtle, sweet-nutty flavour that reflects the purity of the ocean. Each bite showcases the quality of their origin; the crystal clear, nutrient-rich waters of Patagonia.
With 97% pure scallops meat, 2% water and 1% binder we preserve the natural sweetness of the scallops. The natural texture is preserved by gently pressing the scallops into rolls without altering their original form.
Like our Premium Quality and Hokkaido Scallops, these Patagonian scallops are MSC certified.
